These sumptuous tropical fish cakes are a crowd pleaser on resort. They are a light and healthy appetizer that is easy to make at home!
Tropical Fish Cake (serves 4)
- 1/3 cup- olive oil
- 1 lB Dorado Fillet chopped into small pieces
- 4oz red pepper
- 4 oz green pepper
- 3 oz red onion
- 2oz coriander
- 2 oz corn flour
- 1 oz lime juice (fresh)
- Salt and pepper to taste
Tomato salsa
- 4 oz local tomatoes
- 2 oz red pepper
- 3 oz green pepper
- 1 oz fresh lime juice
- Salt and pepper to taste
Method:
FISH CAKES
Marinate the fish with lime juice and olive oil and set aside.
Dice peppers, chop onion and coriander. Mix all ingredients and add corn flour to bind add salt and pepper.
Place fish in a hot frying pan and allow to brown on each side.
SALSA
Chop all ingredients, mix and serve as accompaniment
SERVE
Serve the fish cakes and salsa on a bed of greens with some papaya or mango chutney.
